Food Enzyme Preparations-"Unsung Heroes" Kitted Skills
Abstract:Enzyme applications in cereal food is not a new concept, people have been aware that the use of enzyme products in dough can promote yeast fermentation and improve gluten network for a long time. In recent years continuously developed new products and technologies of enzyme preparations further expand its use in the dough. Enzyme technology applying in many traditional food processing industries are growing concerns, including animal and plant protein in the deep processing of raw materials, dairy products, condiments and baby food. Enzyme technology as a new food processing methods and means being combined with the Chinese characteristics of the local market in the food industry would have more fields discovered and new applications.
