摘    要:可得然胶是由微生物从葡萄糖中生成的发酵多糖类物质,在我国可作为食品添加剂增稠剂使用.它具有既能形成热不可逆性凝胶,又能形成热可逆性凝胶的独特特性,同时具有高热稳定性、耐冷冻冻性和成胶条件单一等特性.本文研究了可得然胶在食品工业中使用的温度条件、溶解条件、获取不同凝胶强度的不同成胶条件,以及研究了可得然胶在食品工业中的两类应用,即分别探讨了可得然胶在食品系统中的辅助性应用及结构性应用的原理及应用实例.

Abstract:Curdlan is a kind of the fermentated polyose substances produced from glucose by microbiology. It can be used as the thickener in food industry in China. It has many superior properties such as thermo inconvertible or convertible properties. It is high heat stable, freezing and defrost resistant and the condition of production is unique. The temperature and the dissolving of curdlan in the food processing and the manufacturing conditions of the curdlan with different strengthes are studied in the paper. Two types of application of curdlan, i. e. , the principle and the application cases of the assistant and structural use in food are discussed in this paper too.
