Abstract: | The increase of (Z)-4-heptenal (I), (Z)-2-nonenal (II), (E)-2-nonenal (III) and 1-octen-3-one (IV), which may contribute to the off-flavours in butter oil, was quantified by stable isotope dilution assays in samples stored at 35° C. At a lower peroxidation level 2-and 3-tert-butyl-4-hydroxyanisol, 2,6-di-tert-butyl-4-methylphenol, -tocopherol and -tocopherol (additions of 0.47 mmol/kg each) inhibited the formation of I to III by 40–50% and that of IV by 20–30%. Acceleration of the autoxidation by the addition of copper ions (1 and 8.5 mg/kg) enhanced the inhibitory effect of the antioxidants. Sensory evaluations revealed that the cardboard off-flavour in butter oil was caused by a mixture of II (>1.5 g/kg)and III(>23 g/kg).
Untersuchung über den kartonartigen Geschmacksfehler von Butterschmalz Zusammenfassung In Butterschmalzproben, die bei 35°C gelagert worden waren, wurde der Anstieg der Fehlaromastoffe (Z)-4-Heptenal (I), (Z)-2-Nonenal (II), (E)-2-Nonenal (III) und 1-Octen-3-on (IV) mit Hilfe von Isotopenverdünnungsanalysen gemessen. Bei niedrigem Autoxidationsgrad hemmten BHA, BHT, -Tocopherol und -Tocopherol (Zusätze von 0,47 mmol/kg) die Bildung von I-III zu 40–50% und die von IV zu 20–30%. Wurde die Autoxidation durch Kupferionen (1 und 8,5 mg/kg) beschleunigt, so erhöhte sich auch die Wirkung der Anti-oxidantien. Sensorische Tests ergaben, daß die Mischung von II (>1,5 g/kg) und III (>23 g/kg) den kartonartigen Aromafehler verursacht.
