火龙果果皮色素的研究进展

摘    要:火龙果红色素是一类具有抗氧化、清除自由基、抗肿瘤等多种生物活性功能的水溶性天然色素,对此,国内外学者进行了广泛的研究。文章从火龙果果皮色素的提取方法,理化特性及生物活性等方面进行了综述,同时展望了研究方向和前景。为更好地开发利用火龙果红色素提供参考。

Abstract:A natural red pigment from the pericarp of pitaya is a kind of antioxidation,scavenging free radicals,anti-cancer and has many kinds of bioactive functions about the natural pigment of water-soluble.To this,extensive research of the pericarp of pitaya were conducted by domestic and overseas.For the better development to provide the reference,extraction method,physical and chemical properties,and biological activity of the pigment from the pericarp of pitaya were reviewed.Meanwhile the further research direction and prospects were prospected in this paper.
