摘    要:了解广西人群摄入八角的情况,分析广西人群通过八角膳食摄入二氧化硫的量,为科学评价人群的健康饮食提供科学依据。方法 按照东、南、西、北、中方向随机抽取广西6个地市,每个地市调查60~90户家庭;在每地市随机抽取市场销售30份以上共184份八角样品,检测其中二氧化硫含量,计算并分析人群通过食用八角摄入的二氧化硫量。结果 本次检测有48份八角(26.09%)二氧化硫超标,D市人群摄入二氧化硫量最高,平均达到0.003 8 mg/ kg BW,最大值达到0.220 3 mg/kg BW,但是都没有超过JECFA所推荐的ADI值。结论 居民应该根据自己的饮食习惯,适量控制摄入八角和其他富含二氧化硫食品的量,在提高食物美味的同时,避免二氧化硫过量摄入引起的健康问题。

Abstract:To understand the intake situation of illicium verum in Guangxi,and to analysis the amount intake of sulfur dioxide from illicium verum in dietary, so as to provide a basis data for assessment on scientific health diet.Methods 6 cities were sampled from Guangxi (Chongzuo, Guilin, Hechi, Liuzhou, Nanning and Yulin), 60 families were investigated in each city (50% families were increased in the Nanning city). According to a random sample of 184 illicium verum test results from Guangxi markets, made a risk assessment on sulfur dioxide from illicium verum intake. Results 48 copies (29.06%) of illicium verum were over level of sulfur dioxide standard. Liuzhou was the highest place intake of sulfur dioxide with an average of 0.0038 mg/kg.bw, while the maximum value reached 0.2203 mg/kg.bw. But all of them did not exceed the value of JECFA ADI.Conclusion People should be based on their eating habits , and control the amount intake of illicium verum and other foods which rich in sulfur dioxide. They should avoide excessive intake of sulfur dioxide while enhanced foods taste.
