Abstract:This paper elaborates the re-recognization and evaluation of the main quality index of the wheat flour under the new situation of the production supply and de-mand of the finish products. And the suggestions to the adjustmeats of the existing stan-dard index. In order to spped the creative remodeling and progress of the flour milling in-dustry.
