摘    要:根据耗散结构理论,食品系统是一个非平衡有序的耗散结构,分析了食品腐败变质的机制.通过分析食品腐败变质的动力,得出食品腐败变质内在条件是:ds>0,得出食品腐败变质过程是熵增过程并非熵减的过程.

Abstract:According to dissipative structure theory,the system of food is a non-equilibrium state dissipative structure ,and it analyzes mechanism of food decay.It illustrates the enter condition that the food in open system can decay is:ds >0,and therefore makes the conclusion that ds is the entropy increase but not the entropy reduce in the process of food decay.
