摘    要:食品安全源头在农产品,农产品质量安全是保障食品安全的重要前提和基础。为了从源头守护老百姓舌尖上的安全,急需开发简便、快速且高通量检测方法用于农产品中各类风险因子的快速监测。随着质谱精密度和分辨率的不断提高及数据库的扩大与完善,非靶向筛查技术逐渐成为农产品质量安全领域定性筛查和分析的有效技术手段。本文综述了非靶向筛查技术(色谱-高分辨质谱)近5年来在农药残留、兽药残留、真菌毒素以及多类污染物筛查和检测中的研究进展,重点介绍了非靶向筛查技术在数据采集模式、筛查策略和筛查方法以及样品前处理方法等方面的研究,并提出了该技术存在的问题及应用前景,以期促进非靶向筛查技术在农产品中多类污染物残留检测领域的发展。

Abstract:The source of food safety lies in agricultural products, and the quality and safety of agricultural products is an important premise and basis for ensuring food safety. With the increasing improvement of people''s living standards, food problems are very prominent, and the types of pollutants are also very complex. Therefore, in order to protect the safety of people''s tongue from the source, it is urgent to develop simple, rapid and high-throughput detection methods for the rapid detection of various risk factors of agricultural products. Currently, with the continuous advance of the precision and resolution of mass spectrometry as well as the expansion and perfection of its database, high-throughput non-targeted screening technology has gradually become an effective technical means for qualitative screening and analysis in the domain of agricultural product quality and safety. In this review, the non-targeted screening technology based on time-of-flight mass spectrometry and electrostatic field orbitrap high-resolution mass spectrometry are summarized, and briefly introducing its application in the screening and detection of pesticide residues, veterinary drug residues and mycotoxins within recent five years. In order to better apply the non-targeted screening technology to the current routine analysis, future efforts should be made to expand and improve the high-resolution mass spectrum database of various pollutants and the screening capacity of unknown substances in agricultural product.
