大豆蛋白酶A抑制剂的提取和性质初探

摘    要:酵母中蛋白酶A的释放对纯生啤酒的泡持性有不良影响。大豆提取液对蛋白酶A有一定抑制效果 ,其抑制效果与作用时间、作用温度以及抑制剂的浓度等因素有关 ,抑制剂对蛋白酶A和胰蛋白酶表现出竞争性抑制 ;采用Superdex75分子筛层析和SDS 聚丙烯酰胺凝胶电泳对粗提取液分离分析 ,发现抑制剂的主要成分是分子质量为 5 0 0 0u左右的蛋白质。在啤酒中添加抑制剂的应用实验中 ,这种抑制剂对其中的蛋白酶A显示出一定的抑制效果

Abstract:There are harmful effect on the stabilization of fresh beer foam as releasing proteinase A from yeast.Proteinase A can be partially inhibitted by the extract from soybean. All kinds of condition include time,temperature and concentration of inhibitor have some effect on inhibition.The inhibitor have been proven to be a kind of competive inhibitor to proteinase A and trypsin.Using FPLC and PAGE analysis system, it found that the molecular of inhibitor is about 5ku.Through primary application in fresh beer,the inhibitor have indeed some action on proteinase A.
