烟叶硝酸还原酶活性在烘烤过程中的变化

摘    要:研究了不同品种、不同部位烟叶在不同烘烤方式、不同烘烤条件下,烟叶硝酸还原酶(NR)活性在烘烤过程中的变化。结果表明,在烘烤过程中NR活性随烟叶的失水干燥而下降,失水干燥快,NR活性下降也快。在不同品种间,红花大金元的NR活性下降比K326的下降稍快。不同烘烤方式、不同变黄温湿度对NR活性变化也有影响,在密集烘烤和较高的变黄湿度条件下,NR活性下降最慢,酶活性保持的时间较长。

Abstract:Changes in tobacco nitrate reductase activity with different varieties, curing modes and curing conditions were investigated. The results showed that nitrate reductase(NR) activity decreased slower in high relative humidity than in low relative humidity at yellowing stage. Considering variety, NR activity of Hongda decreased a little more quickly than that of K326. Considering curing modes, NR activity decreased much slower in bulk curing than in conventional curing and auto control box curing. The water content and moisture removal rate of tobacco leaf could greatly affect NR activity. If the moisture removal rate was too slowly during flue curing, NR activity would decrease slowly and nitrite would be accumulated.
