摘    要:采用水酶法结合挤压膨化预处理提取大豆蛋白.通过响应曲面分析方法以总蛋白质得率为考察指标,确定最佳挤压膨化工艺参数为:模孔孔径为12 mm,物料含水率为17%,螺杆转速为94 r/min,套筒温度为92℃.经过验证与对比试验可知在最优挤压膨化工艺条件下总蛋白得率可达到94.17%左右,比传统的湿热预处理后酶解的总蛋白得率提高了近15%.

Abstract:Aqueous enzymatic extraction combined with extrusion pretreatment was used to produce soybean protein.The response surface methodology was adopted using total protein recovery as terminal parameter to optimize the extrusion parameters.Results:The optimal extrusion parameters are die diameter 12 rain,moisture 17%,rotation speed 94 r/min,and barrel temperature 92℃.The total recovery of soybean protein is 94.17%at the conditions,15 percent point higher than the protein recovery by using the traditional method with hydrothermal pretreatment.
