On Oxygen in the Brewing of Beer,Its Infuence and Its Removal

This paper discusses the function of oxygen in the brewing of beer and its influence. It also analyses its undesirable effects on the brewing of beer and proposes a renovation and adjustment of the equipment and technology in beer brewing so as to use the recovered CO2 in the brewing, filtering and packing of beer, which, in return, will lessen the content of oxygen in beer, reduce the flavour of oxygen in beer and thus raise the quality of beer thus brewed.
