摘    要:本文通过对氧气在啤酒生产过程中的作用,影响和危害的分析,对啤酒生产过程的设备工艺进行改造调整,以及对回收的CO2在酿造,过滤和包装等过程的全用,降低成品啤酒中含氨量,减少啤酒的氧化味,提高产品的质量。

Abstract:This paper discusses the function of oxygen in the brewing of beer and its influence. It also analyses its undesirable effects on the brewing of beer and proposes a renovation and adjustment of the equipment and technology in beer brewing so as to use the recovered CO2 in the brewing, filtering and packing of beer, which, in return, will lessen the content of oxygen in beer, reduce the flavour of oxygen in beer and thus raise the quality of beer thus brewed.
