气调储藏条件下糙米生理活性变化及相关性研究

摘    要:通过正交试验设计,研究了在不同气调储藏条件下,糙米的发芽率、降落数值、还原糖含量的变化规律及相关性.结果表明:糙米含水量越高、储藏温度越高、储藏时间越长,糙米的发芽率越低,降落数值和还原糖含量升高越快.98%N2和40%CO2气调储藏维持了糙米发芽率的稳定性,延缓了降落数值和还原糖含量的变化.

Abstract:Through orthogonal experiments,the paper mainly studied the change rule and the relativity of germination rate,falling number and reducing sugar content in the japonica husked rice under different controlled atmosphere storage conditions.The results showed that the germination rate of the husked rice lowered faster,and the falling number and the reducing sugar content increased faster when the husked rice had a higher moisture content and was stored at a higher storage temperature for longer duration.The co...
