酶法水解燕麦多肽特性的研究

摘    要:研究蛋白酶水解工艺制备燕麦多肽,对燕麦多肽体积排阻进行高效液相色谱(SE-HPLC)分析,测定燕麦多肽的疏水性和溶解性,研究结果显示碱性蛋白酶对燕麦蛋白有较好的水解作用,当未用风味酶水解时,燕麦多肽的平均疏水性为105.43 kj/mol残基,当DH为16.86%时,溶解度达到了100%,并对燕麦多肽脱苦进行研究,测定燕麦多肽的分子量分布,燕麦多肽的相对分子质量分布范围在142~21281 Da之间,主要集中在142~1413 Da之间。

Abstract:The technique of processing oat polypeptide by protease hydrolysis was studied.The oat polypeptide was analyzed by size exclusion high performance liquid chromatography(SE-HPLC).The hydrophobic property and solubility of oat polypeptide was determined.The results showed that alkali protease has good hydrolyzation on oat protein.The average hydrophobic property of oat polypeptide was 105.43 kj/mol residues without flavorases.The solubility achieved 100% when 16.86% DH.Debitterizing of oat polypeptide was also studied and its molecular weight distribution was determined.The relative molecular mass distribution was around 142 ~ 21281Da,mainly in 142 ~ 1413 Da.
