| 摘 要： | 以脱色效果和蛋白保留率为指标，对鸟鸡血酶解液活性炭脱色工艺条件进行优化研究．实验结果表明，在温度为70℃，pH值为5，脱色时间为60min，活性炭使用量为3％的条件下，酶解液的蛋白保留率较高，且脱色效果较佳．
