摘    要:在传统广式腊肠的加工过程中添加适量的猪皮,通过对比试验。添加猪皮的腊肠在感官和理化指标上均好于传统腊肠。

Abstract:The appropriate addition of pigskin during the processing of traditional Guang-shi sausage was determined through the contrast test.The product adding pigskin dachshund was better than the traditional sausage in sensory and physical and chemical indicators.
