Research and Application of Natural Pigments

The pigments play important roles as food colorants and antioxidants. A large body of the literature supports the notion that the incorporation of natural pigments is effectively helpful in preventing many human diseases. In this article, the current understanding and recent progress in the characteristic and speciality, classification, property and function, application and exploitation of natural pigments were summarized. So at present, studying further on natural pigments and exploring more varieties of natural food colouring agents are two essential problems for people.
