摘    要:以苹果渣为原料,研究纤维素酶作用提取苹果渣中水溶性膳食纤维,通过单因素试验和响应面优化试验确定适宜的提取条件。结果表明:在纤维素酶用量0.67%、缓冲液pH5.55、酶解时间1.90h、酶解温度45℃条件下,水溶性膳食纤维提取率最高,为17.50%。

Abstract:One-factor-at-a-time method and response surface methodology were used to optimize the enzymatic extraction of water soluble dietary fiber from apple pomace with cellulase.The highest extraction rate of water soluble dietary fiber,17.50%,was obtained under the conditions: enzyme dose 0.67%,buffer pH 5.55,hydrolysis time 1.90 h,and temperature 45 ℃.
