摘    要:阐述了国内外牛肉屠宰加工业的现状,综合概括了国内外优质肉牛屠宰加工技术和贮藏保鲜技术,并结合国内行业发展趋势,提出牛肉屠宰加工业的发展思路。

Development progress of slaughtering and processing technology in high quality beef
Abstract:Current situation of beef slaughtering and processing at home and abroad were investigated in this article,and the development of slaughtering and processing technology and preservation techniques of high quality beef at home and abroad were comprehensively summarized.According to the industry development trends at home,the development idea of beef slaughtering was proposed.
