低双乙酰啤酒酵母激光诱变条件的研究

摘    要:以激光为诱变剂照射啤酒酵母,得到1株双乙酰值低的啤酒酵母。用该菌株酿造的啤酒,发酵液中双乙酰含量为0.0836mg/L,比用原菌株酿造的啤酒下降了53%。激光诱变的条件为:波长623.8nm(红色)、功率6mW的He—Ne激光,用滤纸片法照射啤酒酵母,照射时间为5min。

Abstract:A low-diacetyl producing Saccharomyces cerevisiae was obtained by using laser as a mutagen to irradiate S. cerevisiae. The fermented broth of the beer made from this strain contained diacetyl of 0.0836 mg/ L, a 53% reduction than the beer made from original strain. The mutation condition was: 623.8 nm (red) wavelength, He-Ne laser with 6 mW power, filter-paper irradiation method, and 5 min irradiation time.
