油茶籽毛油中多酚类物质对自由基的清除作用

摘    要:油茶籽油具有重要的保健功能和药效功能.通过油茶籽毛油中多酚类物质对不同种自由基清除的活性作用研究,其结果表明,油茶籽毛油中多酚类物质对羟基自由基和超氧阴离子自由基有良好的清除作用,加入多酚样品的质量浓度在0.53~7.29 μg/mL范围内,对羟基自由基的清除率高达65.21%以上;不同极性的多酚类物质清除效果不同,极性大的多酚类物质其总抗氧化能力较弱,对自由基的清除能力较强,为开发功能性油脂提供理论依据.

Abstract:Camellia oleifera seed oil has very important health care function and pharmacodynamic action. The scavenging effects of polyphenols in Camellia oleifera seed oil on free radicals were studied. Results : The polyphenols extracted from Camellia oleifera seed oil exhibit satisfactory scavenging effects on ·OH and ·O_2. The scavenging rate on·OH is more than 65.21% when polyphenol concentration ranges from 0.53μg/mL to 7.29 μg/mL. And it is found that the efficiency of scavenging free radicals is different between high polarity polyphenols and low polarity polyphenols. High polarity polyphenols exhibit weaker ability in total antioxidant effect and stronger activity in scav-enging free radicals.
