Food Ingredients and the Quality of Bread

China is a big bread consuming country.With the development of the economy,the quickening of living rhythm,it is an inevitable development trend that the specification and quantity of bread considering it as a main course.Thus it is of great value to raise the quality of flour products.The author introduced the research development works done by foreign companies and some new products.The author hopes that this paper will push forward of the research works on quality improver of flour in China.
