摘    要:利用环氧氯丙烷对大豆分离蛋白(SPI)进行改性制备可生物降解材料。探讨了材料形成过程中蛋白分子表面巯基含量和蛋白分子表面疏水性与材料的性质的关系。结果表明,材料形成过程中的抗拉强度与分子表面巯基基团的变化没有必然的联系;抗水性与蛋白分子表面疏水性基本上呈现正相关的关系,而材料的水溶性则和这两者没有必然联系。

Abstract:The soy protein isolate was modified with epoxy chloropropane, and a degradable material was produced. Relationships between performance of this material and surface hydrosulfuryl content, surface hydrophobicity were studied. The results show that there is no correlation between tensile strength and surface hydrosulfuryl content, and between water solubility and water resistance or surface hydrophobicity, respectively, but a positive correlation was found between water resistance and surface hydrophobicity.
