Ice Cream:From Cool to Health
Abstract:The fast developing ice cream industry has shown an attractive prospect.In order to cater for customers,ice cream manufactures turn to innovation that leads the industry to a new orientation. With economy soaring and life style changing,ice cream is no long merely consumed by children in China.Adults also become keen to it.And consumers become more and more fastidious with flavor,colour,packaging and price.Meanwhile, certain new demands have emerged,such as health,nutrition and functions. In detail,natural materials are becoming increasingly popular.And natural additives begin to apply widely.In fact,the various functional products have been launched into market.These products not only improve ice cream flavor,but also fortify the nutrition and functionality.Func- tional sweetening agents are especially superior in face of the inclination of healthy ice cream.With the consideration of low sugar intake,certain sweetening agents are replacing sucrose in ice cream new products,such as Low Poly- isomaltose,maltooligosaccharide,fructo-oligosaccharide and phycitol.
