鳄龟不同部位肌肉氨基酸分析及营养评价

摘    要:为探究鳄龟不同部位的肌肉营养价值,对腿、尾、背甲和脖子4个部位肌肉的水分含量、蛋白质含量、氨基酸组成和含量进行测定和分析,并对氨基酸进行营养评价。结果表明:鳄龟腿、尾、背甲和脖子4个部位肌肉的水分含量分别为77.99%、76.75%、78.34%和80.04%,蛋白质含量分别为17.32、14.65、16.67 g/100 g和19.04 g/100 g。鳄龟腿、尾、背甲和脖子4个部位肌肉中16种氨基酸总量分别为17.513、17.512、17.054 g/100 g和16.851 g/100 g。鳄龟腿、尾、背甲和脖子4个部位肌肉中7种必需氨基酸含量分别为6.925、6.686、6.674 g/100 g和6.804 g/100 g,占16种氨基酸总量的百分比分别为39.54%、38.18%、39.14%和40.38%。鳄龟腿、尾、背甲和脖子4个部位肌肉中药用氨基酸含量分别为11.772、11.698、11.384 g/100 g和11.369 g/100 g,占16种氨基酸总量的百分比分别为67.22%、66.80%、66.75%和67.47%。4个部位肌肉第一限制性氨基酸均为蛋氨酸。鳄龟腿、尾、背甲和脖子4个部位肌肉EAAI分别为80.9、89.9、79.0和69.2。综合AAS、CS和EAAI的数据,表明鳄龟尾部肌肉在4个部位中营养价值最高。

Abstract:In order to explore the nutritional value of muscle in different parts of Chelydra serpentina,the water content,protein content,amino acid composition and content of muscle in legs,tail,back and neck were measured and analyzed,and the nutritional evaluation of amino acids was carried out.The results showed that the water content of the muscles in the legs,tail,back and neck were 77.99%,76.75%,78.34% and 80.04%,respectively,and the protein content were 17.32 g/100 g,14.65 g/100 g,16.67 g/100 g and 19.04 g/100 g,respectively.The total amount of 16 amino acids in muscles of legs,tail,back and neck were 17.513 g/100 g,17.512 g/100 g,17.054 g/100 g and 16.851 g/100 g,respectively.The contents of 7 essential amino acids in the muscle of legs,tail,back and neck of Chelydra serpentina were 6.925 g/100 g,6.686 g/100 g,6.674 g/100 g and 6.804 g/100 g,respectively,accounting for 39.54%,38.18%,39.14% and 40.38% of the total amount of 16 amino acids.The contents of amino acids in the muscle of legs,tail,back and neck were 11.772 g/100 g,11.698 g/100 g,11.384 g/100 g and 11.369 g/100 g,respectively,accounting for 67.22%,66.80%,66.75% and 67.47% of the total amount of 16 amino acids.Methionine was the first limiting amino acid in the four muscles.EAAI of legs,tail,back and neck muscles were 80.9,89.9,79.0 and 69.2,respectively.According to the data of AAS,CS and EAAI,the tail muscle of Chelydra serpentina has the highest nutritional value among the four parts.
