摘    要:高胆固醇血症为心脑血管疾病的重要诱因,使用具有降胆固醇活性的乳酸菌调控血清胆固醇水平具有重要意义。研究从健康人群粪便中分离获得1株动物双歧杆菌和5株屎肠球菌,考察了这些菌株的胆固醇脱除能力、胆盐耐受能力、模拟胃肠道条件耐受能力等特性。结果表明,屎肠球菌MCLF03和MCLF04对胆固醇的脱除能力显著高于其他菌株,脱除率分别为(38.9±3.77)%和(61.0±4.75)%。屎肠球菌MCLF04在0.5%胆盐溶液、人工胃液、人工肠液中的耐受性均高于屎肠球菌MCLF03。屎肠球菌MCLF04具有潜在的降胆固醇特性,可用于降胆固醇功能性食品的开发研究。

Abstract:Hypercholesterol is an important inducement of cardiovascular and cerebrovascular diseases.It is significance to use lactic acid bacteria with cholesterol lowering activity to regulate serum cholesterol level.In this study,one strain of Bifidobacillus animalis and five strains of Enterococcus faecium were isolated from health human feces.The cholesterol removal ability,bile salt tolerance and gastric acid tolerance of these strains were investigated.The results showed that the cholesterol removal ability of Enterococcus faecium MCLF03 and MCLF04 was significantly higher than those of other strains,with the removal rates (38.9±3.77)% and (61.0±4.75)%,respectively.The tolerance of E.faecium MCLF04 to 0.5% bile salt solution,artificial gastric juice and artificial intestinal fluid was higher than those of E.faecium MCLF03.E.faecium MCLF04 has cholesterol-lowering potential and can be applied in functional food development.
