摘    要:乳制品是人体健康必需营养的重要来源之一,因此保证乳制品的质量和安全至关重要。作为一种新型的激光烧蚀原子发射光谱技术,激光诱导击穿光谱已经在乳制品的定性和定量分析方面展现出了巨大的应用潜力。本文简要介绍了激光诱导击穿光谱的检测原理,综述了激光诱导击穿光谱在乳制品中矿物质元素、重金属元素、脂肪和蛋白质含量,以及牛奶掺假物检测方面的最新研究进展。最后,探讨了激光诱导击穿光谱在乳制品质量检测方面存在的问题并对其发展趋势进行了展望。

Abstract:Dairy products is one important source of essential nutrients for human health, and thus it is critical to ensure the quality and safety of dairy products. Laser induced breakdown spectroscopy (LIBS), as one kind of novel laser-ablation atomic emission spectroscopy, has shown powerful potential for qualitative and quantitative analysis of dairy products. This paper briefly introduces the detection principle of LIBS and gives a review of recent development of LIBS for the detection of mineral elements, heavy metal elements, fats and proteins content in milk products, as well as the milk adulterants. Finally, the current problems and the future perspectives in the quality detection of dairy products using LIBS are discussed.
