微生物检测技术及其在食品安全中的应用

摘    要:介绍了微生物免疫学、分子生物学、生理生化代谢产物、自动化仪器、生物传感器等检测技术的原理和特点,举例说明了食源性病原菌免疫学、核酸探针技术、PCR技术、生物芯片技术、生物传感器检测技术在食品安全检测中的一些应用,通过对比指出生物芯片技术、生物传感器检测技术是今后微生物检测技术发展的方向.

Abstract:The technology principles and characteristics of microbial immunology,molecular biology,physiological and biochemical metabolites,automation instrument and biological sensors detection were introduced.Some applications of foodborne pathogenic bacteria immunology,nucleic acid probe techniques,PCR technology,biological chip technology and biological sensors detection technology were illustrated in the food safety testing.By comparing,it was pointed out that the biological chip technology and biological sensors detection technology were the development trend of the microbial detection technology.
