摘    要:从还原力、清除超氧阴离子自由基(O2-·)、羟基自由基(·OH)、NO2-等方面,研究龙井茶多糖的抗氧化活性。结果表明,加入茶多糖的质量浓度在0.2 mg/mL~1.0 mg/mL范围内,对NO2-离子、O2-·自由基和·OH自由基的清除率为50%的多糖浓度分别是0.536、0.667、0.855 mg/mL。证明龙井茶多糖具有较强的还原力,对在胃液模拟条件下NO2-的清除作用最强,最高清除率高达84.1%、对O2-·的抑制作用次之,达到71.6%,对.OH的最高清除率为67.6%,活性大小随着茶多糖浓度的增加均呈明显增强的趋势,但均低于阳性对照VC的清除率,在较高茶多糖浓度下与VC清除率逐渐接近,表明龙井茶多糖具有较强抗氧化性能。

Abstract:The antioxidant effect of Longjing Tea Polysaccharides was studied through examinations of their reducing force,their clearing functions on O2-.,.OH and NO2-,etc.The results show that with specimens of the TPS concentration within 0.2 mg/mL-1.0 mg/mL,the TPS concentrations which can lead to the clearance of 50 % to O2-.,.OH and NO2-are 0.536,0.667,0.855 mg/mL.This proved that the Longjing Tea Polysaccharides had a strong reducing force,which was at its best result under the simulated gastric juice conditions,with the clearance rate of 84.1 %.The second best result was its inhibiting effect to O2-.,it’s 71.6 %,and its clearance rate to.OH is 67.6 %.The reactivities increase with the increases of TPS concentrations,but always lower than that of VC.That showed Longjing Tea Polysaccharides had a strong inoxidizability.
