桑葚儿童保健果冻的研制

摘    要:以桑葚、山楂、金银花、野菊花为主要原料,通过优化工艺条件、设计正交试验,筛选出最佳配方比例,研制成桑葚儿童保健果冻。获得最佳原料配方为桑葚汁50%,金银花野菊花浸提液10%,山楂汁15%,糖酸比100∶1,稳定剂加入量0.5%。研制的桑葚儿童保健果冻,既具有食用价值又具有开胃保健等药用功效,尤其适合儿童食用。

Abstract:Use mulberry,hawthorn,honeysuckle and wild chrysanthemum as the main raw materials.Through optimizing the process conditions,orthogonal designed experiments,the best formula was selected for the development of this healthly and nutritious mulberry jelly.The best formula determined from the experiments: 50 % mulberry juice,honeysuckle wild chrysanthemum extract 10 %,15 % hawthorn juice,sugar acid ratio 100∶1,stabilizer ratio 0.5 %.The mulberry jelly investigated contains both high consuming value and healthy care quality,hence was a desieable food for children.
