摘    要:介绍了壳聚糖的保鲜机理及其影响因素,总结了壳聚糖在果蔬和其他食品保鲜包装上的应用情况,分析了至今未被应用于实际的原因,展望了壳聚糖保鲜包装技术的发展。

Abstract:The preservation mechanism of chitosan and its influencing factors were introduced. The application of chitosan in fruit,vegetable,and other food was summarized. The reasons of chitosan's not being applied yet were analyzed. The development of chitosan preservative packaging technology was prospected.
