4种市售牛乳中硝酸盐、亚硝酸盐的检测与分析

目的:检测市售4种牛乳中硝酸盐与亚硝酸盐的含量。方法:将牛乳样品沉淀脂肪和蛋白后,过滤,用镀铜镉粒使部分滤液中的硝酸盐还原为亚硝酸盐。加入磺胺和N-1-萘基-乙二胺二盐酸盐,测其吸光度,将测得的吸光度与亚硝酸钠标准系列溶液的吸光度进行比较样品中的亚硝酸盐含量和硝酸盐还原后的亚硝酸盐总量,从两者之间的差值计算出硝酸盐的含量。结果:硝酸盐含量在0.9027～1.0840mg/kg之间,亚硝酸盐在0.0015～0.0030mg/kg之间。结论:所检测的4种市售牛乳中硝酸盐和亚硝酸盐含量均在安全范围内,不会对饮用者健康造成危害。
