综合质量评价指标在打击白兰地假冒伪劣中的应用

摘    要:白兰地成分复杂,可研究的质量评价指标也相对较多。选取了可对白兰地进行有效评价的质量指标进行研究,主要有感官,矿质元素,总酚,单宁,多酚类物质,香气成分,色度、pH等,并围绕白兰地质量进行了分析研究,利用质量评价指标提出鉴别假冒白兰地的初步方案,并应用于打击白兰地假冒伪劣。

Abstract:Brandy complex composition,research quality evaluation index is also relatively more.This paper selects the brandy for effective evaluation of quality indicators for research,main Sensory,mineral element,total phenolics,Tannins,polyphenols,aroma components,Chroma and pH,and around brandy quality were analyzed,using quality evaluation index of discriminating counterfeit brandy preliminary scheme.Application in the fight against fake and brandy.
