摘    要:白云边公司通过移植微生物群系,培养优质老窖泥来改善新车间酿造环境。为了研究这两项具体措施对提高新车间酒的产量和质量方面所产生的效果,我们作了长期跟踪对比试验,比较了连续四年来,新老两车间窖池窖泥微生物数量规律以及总出酒率和一级品率的变化情况。结论是老车间窖池窖泥微生物数量较稳定,新车间窖泥微生物比老车间少却增长迅速。新车间所产酒的产量和质量虽然不及老车间,却逐年稳步提高,表明优化环境的措施是行之有效的。

Abstract:Baiyunbian Co.Ltd through transplantation of microbial population,culture quality aged pit mud in order to improve the new brew environment.In order to study the two measures to improve the liquor yield and quality effects.We do a long-term tracking of contrast test.Comparision new and old workshop pit mud microorganism quantity law and liquor yield and quality changes of 4 years.Conclusion the old workshop pit mud amount relatively stable.New workshop pit mud microorganism than the old shop less rapid growth.The new workshop liquor yield and quality than the old workshop difference.But steadily increased year by year.Results show that the optimum environmental measures are effective.
