摘    要:以藤茶为原料,运用单因素试验和正交试验方法,研究水提法提取藤茶水溶性膳食纤维的最佳工艺条件。结果最佳工艺条件为水料比30∶1,提取温度80℃,提取时间4h。水溶性膳食纤维平均提取率为9.1%,产品颜色为乳白色粉末。

Abstract:Ampelopsis grossedentata was used as raw materials to conduct water extraction of water-soluble dietary fiber (SDF). The extraction conditions were optimized by single-factor and orthogonal experiments based on the extraction rate. The results indicated that the optimal extraction parameters for SDF were as follows: liquid-material ratio 30:1, extraction time 4h and extraction temperature 80℃. Under these optimal conditions, the extraction rate of SDF was up to 9.1%, and the obtained SDF was milky powder.
