| 摘 要： | 针对兰州面制品市场非法添加硼砂的事件进行了抽样分析检测，初步掌握了在面条中使用违禁添加剂的现状，为食品监督执法工作的开展提供参考。此次检测共抽样97个批次，结果表明，在一些面食店的自制面条中不同程度地检出硼砂，不合格率高达18.6%，严重危害市民的身体健康，食品安全现状不容忽视。

| Abstract: | A sampling analysis and detection for illegally adding borax into noodles of Lanzhou flour products market was made to grasp the present situation of using banned additives in noodles preliminary, which provided reference for conducting food supervision and enforcement work. We extracted 97 samples in this detection, and the results found that borax was detected in homemade noodles of some pastry shop in different degree, the percentage of rejects was 18.6%, which endangered citizens＇ health seriously, and the present situation of food safety cannot be ignored. |
