摘    要:以胡萝卜为材料研究吸附干燥的干燥特性和杀菌机理。实验表明,吸附干燥的影响因素主要有处理风湿度、温度、风速和物料表面积;通过研究干燥过程中物质物理化学性质,说明干燥后胡萝卜营养成分变化小,保持原有色香味;系统中除湿轮和过滤器能保持空气洁净,加入杀菌剂ClO2有利于空气和干燥产品的杀菌。

Abstract:The drying characteristics and sterilization mechanism of adsorption drying system using carrot as raw material are investigated experimentally and theoretically.The results show the main influential factors are the humidity,temperature and velocity of dried air and surface area of raw material.The carrot can keep basically original nutrient,color,perfume and taste during the process.The rotary dehumidifier and high efficient filter can keep the system clean.When sterilizing agent(ClO 2)is added to the system,the sterilizing effect to air and products will be increased.
