北京市学生营养午餐营养素供给量评估

摘    要:目的:了解北京市中小学生营养午餐营养素供给情况,为改进中小学学生营养午餐营养素供给量提供科学依据.方法:采用查账法结合学生营养午餐食谱,对丰台区3家学生营养午餐的送餐企业提供的营养午餐进行调查和分析.结果:中小学食谱能量的供给基本符合国家卫生部发布的《学生营养午餐营养素供给量》标准,中小学生能量分别达到标准值的100.2%和100.7%.中学生蛋白质供给偏高,超国家标准111.6%;维生素、矿物质大部分满足需求;钙、维生素A、维生素B族不足比较明显,均低于国家标准值的70%以下,尤其是钙的供给量在国家标准的46%以下.现场调查食谱的执行情况良好,但发现实际制作中存在油量超标、剩饭现象.结论:学生营养午餐在10余年的发展过程中已趋于成熟,随着时代的变迁,有些长期存在的个别营养成分供给不足的情况亟待解决.

Assessment on Nutrients Supply of Nutritional Lunch of Students in Beijing City

Abstract:[Objective] To study nutrients supply of nutrition lunch among middle school students in Beijing city and provide scientific basis to improve primary and secondary school students' nutrient supply of nutrition lunch.[Method] We surveyed and analyzed nutritious lunch of three student nutritious lunch meals enterprises in Fengtai District in Beijing through recipes in combination with the audit method.[Result] Energy supply of primary and secondary schools released recipes met national health standard basically,which achieved the standard of 100.2% and 100.7% respectively.Protein supply of secondary schools was higher,which exceeded national standard 111.6%.Vitamins and minerals most met demand,while calcium,vitamin A and vitamin B group were lack obviously,which were all below 70% of the national standard,especially calcium supply were below 46% of the national standard.Field investigation recipes perform was in good condition,but phenomenon of production of oil paint and leftovers existed.[Conclusion] Students' nutritious lunch had been mature in more than 10 years,and as the changes of times,some of the long-term individual insufficient nutrients supply were needed to be resolved.
