摘    要:报道了从红葡萄皮和葡萄汁中提取食用色素的工艺方法,以及由此技术得到的色素的质量卫生指标、溶解性、热稳定性、光稳定性、抗氧化性和吸收光谱等理化性质。

EXTRACTION AND CHARACTERIZATION OF GRAPE PIGMENT
Abstract:Abstract Grape pigment was obtained by aqueous ex-traction of grape skin or mare of juice,and re-fined by macroporous resin,The stability ofgrape pigment to light,heat and oxidizing agentin the Na_2HPO_4-citric acid buffer(pH3.0),andthe solubility of the pigment were studied. Thespecifications of the products were also tested.
