Abstract: | Abstract Grape pigment was obtained by aqueous ex-traction of grape skin or mare of juice,and re-fined by macroporous resin,The stability ofgrape pigment to light,heat and oxidizing agentin the Na_2HPO_4-citric acid buffer(pH3.0),andthe solubility of the pigment were studied. Thespecifications of the products were also tested. |
