摘    要:比较了世界各国食物过敏原标示制度及主要过敏原物质的检测方法.使用免疫色谱法(简易试纸卡盒定性法)和酶联免疫法(ELISA试剂盒定量法)对中国国内生产销售的预包装食品中食物过敏原物质-甲壳类原肌球蛋白的含量进行了定性、定量检测.结果表明两种方法有很好的相关性.免疫色谱法(简易试纸卡盒定性法)操作简单、快速便利,可用于食品...

Abstract:Food allergen labeling legislation overseas and main crustacean determination methods were compared.Crustaceans in packaged processed foods that made and sold in Shanghai were analyzed by Immuno chromato and enzyme Immuno Assay Kit.The results showed two methods have good correlation.Immuno chromato is suitable for fast testing in Factory or fast food industry.Enzyme Immuno Assay is suitable for research and quantitative Analysis.The results of crustacean tropomyosin in 12 various foods showed these package labelings are correct.
