Abstract: | Comparison of the Characteristic Physico-Chemical Data of Modified Wheat and Potato Starches. A comparison of some physico-chemical properties of wheat and potato starch has been given with regard to their behaviour before and after treatment by mild modification procedures. In this way a survey of the characteristic data of both starch sorts was obtained, i. g. the swelling and solubility capacities, the viscosity and limiting viscosity, extraction of the starch films, the X-ray diffraction patterns a. o. which were elucidated and discussed. |
