| 摘 要： | 通过使用自制柔软度仪测定馒头的硬度、弹性,确定柔软度仪与TPA测定值关系.所得结果如下:柔软度仪下压距离与TPA硬度高度显著相关,放砝码后,下压距离与TPA弹性高度显著相关,可以用之部分代替,TPA.
