摘    要:本文研究了表观粘度法作为食用高分子复配增效作用鉴别判据的适用性。常用的判据有简单的浓度加和法和粘度加和法。当二元体系的浓度指数都大于1时,粘度加和法得到的结果小于浓度加和法。当二元体系的浓度指数都小于1时,粘度加和法得到的结果大于浓度加和法。当二元体系的浓度指数一个大于1,一个小于1时,粘度加和法的结果在一定浓度范围大于浓度加和法,在其他浓度范围内小于浓度加和法。当二元体系的浓度指数都等于1时,浓度加和法和粘度加和法的结果一致。

Abstract:The applicability of apparent viscosity in the investigation of synergistic interaction between two different polymers was studied. Simple concentration additivity and viscosity additivity are the two commonly used criteria for judging the synergistic effect in binary biopolymer systems. When the viscosity indexes of both polymers are greater than one, the viscosity of mixture calculated from viscosity additivity is lesser than that calculated from concentration additivity. When the viscosity indexes of both components are less than one, the viscosity of mixture calculated from viscosity additivity is greater than that calculated from concentration additivity. The relationship between two methods is quite complex when the viscosity index of one component is greater than one and the other one is less than one. When the viscosity indexes of two components are both equal to one, the two methods are identical.
