烹饪高等教育的价值取向和培养模式

摘    要:烹饪高等教育属于高等职业教育,兼有学术性与职业性两种基本的价值取向,但更强调其职业性.在培养模式上应突出三个特点:专业设置体现"职业性",课程内容强调"应用性",教学过程注重"实践性".

Abstract:The higher education of Chinese cuisine belongs to the category of higher vocational education, thus having both academic and vocational value orientations, especially the latter one. For the education pattern of the higher education of Chinese cuisine its three characteristics should be emphasized, that is, the vocational particularity of its speciality program, the applicative particularity of its curriculum contents and the practical particularity of its teaching process.
