桑椹渣中水溶性膳食纤维的提取工艺研究

摘    要:以桑椹渣为原料,采用单因素和正交实验考察了酸水解法提取桑椹渣中水溶性膳食纤维的工艺条件。结果表明,最佳提取条件为:反应温度60℃,提取时间2.5 h,液料比12∶1(mL/g),盐酸浓度0.3%。在此优化条件下,水溶性膳食纤维的得率可达9.28%。

Abstract:Mulberry pomace was used as raw materials to extract soluble dietary fiber with single factor experiments and orthogonal tests.Results showed that the optimum conditions were as follows:60 ℃,2.5 h,solid-to-liquid ratio 12 ∶1(mL/g) and hydrochloric acid concentration 3%,under this condition,the yield of soluble dietary fiber may up to 9.28%.
