| 摘 要： | 为降低茶叶籽油的过氧化值，分析了茶叶籽毛油中金属离子含量，探讨了不同螯合剂和吸附剂去除金属离子的效果，并选用SnCl2和次亚磷酸钠作为还原剂进行了降低茶叶籽油过氧化值的试验。试验确定的优化条件下，茶叶籽油的过氧化值从20．7meq／kg降低至2．41meq／kg，成品油质量指标达到食用油标准。

| Abstract: | To lower the POV of tea seed oil,the metal ion content in crude tea seed oil was determined and the effect of different complex agent and absorbent on eliminating metal ions were also studied.The results show that SnCl_2 and NaH_2PO_2 can decrease the POV of tea seed oil from 20.7 meq/kg to 2.41 meq/kg,and the end product quality is up to the standard of edible oil. |
