摘    要:油脂在贮存和加热过程中,油脂所产生的水解、氧化、分解、聚合等一系列化学反应,将导致油脂的品质下降,内在性质变劣。因此,应对油脂贮存劣变和加热劣变的产生原因和变化途径进行分析和阐述。

Abstract:In the process of oil storage and oil heating, a series of chemical reactions resulting from oil hydrolysis, oxidizing, resolution and polymerization will lead to the poor quality of oil and the inferior changes of its nature. This article deals with the analysis and statement concerning the ways to causes and changes of the inferior changes of oil storage and oil heating .
