动物源性食品磺胺类抗生素残留快速前处理与检测方法研究进展

摘    要:磺胺类抗生素具有抗菌谱广、使用简单和价廉等优点,被广泛应用于动物抗菌治疗,但抗生素的滥用易导致动物源性食品抗生素超标等食品安全问题。食品中磺胺类抗生素残留检测方法主要为高效液相色谱法,而动物源性食品样品复杂、基质干扰大,色谱分析方法通常耗时较长,费用昂贵,因此开发高效的快速样品前处理技术和快检方法对磺胺类抗生素残留检测尤为重要。本文综述了近十年来动物源性食品磺胺类抗生素残留快速样品前处理技术的研究进展,包括场辅助加速样品前处理技术和基于材料加速的相分离样品前处理技术,介绍了磺胺类抗生素的多种快检方法如荧光光谱法、化学发光法、表面增强拉曼光谱法、电化学法、免疫分析法和微生物抑制法等的研究进展,并对动物源性食品磺胺类抗生素残留快速样品前处理和检测方法存在的问题和未来发展趋势进行了分析和展望。

Abstract:Sulfonamide antibiotics are widely used in animal antimicrobial therapy because of their broad antimicrobial spectrum, simplicity of use and affordability. However, the abuse of antibiotics can easily lead to food safety problems such as excessive antibiotics in animal-derived food. The detection method of sulfonamides residues in food is mainly high performance liquid chromatography, but animal-derived food samples are complex and have large matrix interference, moreover, chromatographic analysis methods are usually time-consuming and expensive. Therefore, it is particularly important to develop rapid and efficient sample pretreatment technology and detection methods for the detection of sulfonamides antibiotic residues. This paper reviewed the research progress of rapid sample pretreatment technology for sulfonamide antibiotic residues in animal-derived food over the past 10 years, including field-assisted accelerated sample pretreatment technology and phase separation sample pretreatment technology based on material acceleration, introduced the research progress of various rapid detection methods of sulfonamide antibiotics, such as fluorescence spectroscopy, chemiluminescence, surface-enhanced Raman spectroscopy, electrochemical method, immunoassay and microbial inhibition method, analyzed the problems and summarized the development tendency of rapid pretreatment and detection methods for sulfonamide antibiotic residues in animal-derived food.
