壳聚糖膜在黄瓜保鲜中的应用

摘    要:制备了壳聚糖复合膜,并应用于黄瓜保鲜。在保鲜实验中,测定了黄瓜的失水率、叶绿素、维生素C、硬度等指标的变化。结果表明,使用涂膜保鲜后,12d时黄瓜的失水率为7.5%、维生素C减少45.4mg/kg、叶绿素减少5mg/kg,黄瓜的硬度保持较好。利用壳聚糖复合膜的保鲜效果好于通常的保鲜膜保鲜效果。

Abstract:Complex chitosan membrane was prepared and its application on the preservation of cucumbers was studied.The results showed that after preservation with chitosan membrane for 12 days,the dehydrating rate was 7.5%,Vitamin C decreased in 45.4 mg/kg,chlorophyll decreased in 5 mg/kg,the hardness was well kept.The composite chitosan membrane showed better preservation results than that of normal film.kwy words:chitosan;composite membrane;preservation;cucumber
