制油工艺对大豆油脱胶效果影响的研究

摘    要:本文以非水合磷脂相对含量来反映大豆油水化脱胶效果,探讨了制油工艺对大豆油脱胶效果的影响。结果表明除磷脂酶D对脱胶效果有显著影响外,水分、大豆细胞结构破坏程度(如轧胚)及浸出前物料储存时间与温度等对脱胶效果也有不同程度的影响。因此,有必要对现行工艺进行改进并进一步优化工艺参数。

Abstract:This paper discusses the effects of oil-producing process on the soybean oil degum-ming result with the relative content of nonhydratable phosphatides reflecting the soybean oil degumming result. The discussed result shows that phospholipase D as well as the moisture, the destroying degree of the cell structure of soybean (such as flaking),the storag time and the temperature of the material before being extracted in fluences the degumming result to some degree. So it is necessary to imprve the existing technology and optimize process parameters.
